Mocha Mousse with Szechuan Peppercorns

Valentine’s day has got me thinking about the nature of love. I’ve always scoffed at the suggestion of love as a natural force like gravity (it was an eye-rolling moment for me in “Interstellar”). But then again, isn’t love the result of chemicals produced and exchanged between our brains’ neurons? Aren’t there hormones involved, and sweat and saliva (among other things)? These are very much real things that require the consumption (and creation) of energy, albeit in small quantities. So, who am I to say that love isn’t a natural force? It certainly is a force of nature.

Or maybe love is a parasite, that infects humans in order to ensure its continued existence.

There is a fungus called ophiocordyceps unilateralis that propagates itself by infecting carpenter ants with its spores. The spores burrow their way into the ants’ brains and take over their behavior (which is why the fungus is also known as the “zombie fungus”). They force the ant to climb up a leaf and bite at the underside of the leaf, unable to unlock their jaw and therefore unable to move or walk away. The ants eventually die, still gripping the leaf. Soon, from the back of the ant’s head grows a long stalk that begins to release spores that land on the ants walking around below, thus ensuring the next cycle of zombie ants.

Creepy, you say? Nothing to do with beautiful love as we know it? To you I say: have you ever seen the irrational, crazy things love makes people do? I wouldn’t throw out the parasite theory just yet.

DSC03646But for you romantics out there (and I count myself amongst you), here is a third possibility. Maybe love is just a lovely mystery, something greater than the sum of its parts.I like this idea of love as a peculiar process that enriches and transforms us. A little like the way in which when air is introduced into slimy, pale egg whites, it turns them into dazzlingly white, ethereal clouds, ready to be baked into crispy meringues, transformed into angel food cake, or folded into melted chocolate to make a silky smooth chocolate mousse.

Mocha Mousse with Sichuan Peppercorns – Slightly adapted from Epicurious.com

Note: If you can’t find sichuan (or szechuan) peppercorns you can simply omit them. But they do add a nice, subtle zing to the mousse.

Makes 8 servings

Ingredients:

3/4 teaspoon Sichuan peppercorns
1 cup heavy cream
1 1/2 tablespoons ground coffee beans
12 ounces 70%-cacao bittersweet chocolate, chopped
9 large egg whites
3 tablespoons sugar

Directions:

Coarsley grind peppercorns in mortar and pestle or using a bowl and back of a spoon.

Bring cream, coffee, and peppercorns to a simmer in a small saucepan. Remove from heat and let steep, covered, 30 minutes. Strain cream through a fine-mesh sieve into a bowl, pressing on solids.

Melt chocolate in a large bowl. Stir in cream and mix with spoon until completely combined. Cool slightly.

Beat egg whites with sugar using an electric mixer until they just hold stiff peaks. Fold egg whites into chocolate mixture gently but thoroughly (no white streaks remaining).

Spoon mousse into 4oz-5oz serving glasses (it will be runny; it will firm up once chilled). Cover and chill at least 3 hours before serving. Mousse can be prepared ahead and kept in the fridge covered for up to 2 days.

Chorizo and Chocolate Toasts

DSC03401It’s not often that Steve and I are surprised by a totally new flavor or combination of flavors. It’s one of the downsides of being an adventurous omnivore. The more things you try, the fewer things surprise you. So when it does happen, when we try something really new and unexpected and we love it (because sometimes “new and unexpected” can also be terrible), we always try and recreate it at home. Sometimes, it proves impossible. Like the time when we were exploring Brittany in France and we stopped in a small seaside town for lunch. Steve ordered a seafood soup that was so unusual in its flavor profile, while also so satisfying – in a ‘feeding your soul’ kind of way – that we’ve spent the last five years trying to recreate it, never even coming close.

But sometimes, we get lucky. Several years ago we visited for the first time an amazing Spanish tapas restaurant in New York called Tia Pol. We have since returned many times but on that night, we discovered for the first time the deep intensity of smoked paprika and the excitement of fried shishito peppers with sea salt. But it was this dish that surprised us the most: little slices of bread topped with thinly sliced chorizo and topped with melted dark chocolate. It was unexpected, new, and utterly addictive.

There’s really no recipe for this but if you need one here it is.

Chorizo and Chocolate Toasts

Ingredients:

1 baguette
Spanish chorizo (not the Mexican kind)
Dark chocolate, finely chopped

Directions:

Preheat oven to 425º F.

Cut the baguette crosswise into 1/2 inch slices. Arrange slices on a cookie sheet or baking pan. Top each slice with one slice of chorizo. Sprinkle chocolate on top of chorizo.

Place in oven until the chocolate melts (this could take anywhere from 30 seconds to 3-4 minutes; keep an eye on them so they don’t burn). Serve immediately.

Double Chocolate Zucchini Bread

I am not a fan of the cherished American tradition of making desserts out of vegetables. I have never liked pumpkin pie. Sweet potato pie? Not for me. I’ll eat a slice of carrot cake but only because it’s usually covered in sugary, creamy frosting (though I did recently find this unfrosted recipe that I love). I think zucchini muffins are ok as a snack but as dessert? No way. It’s not because I don’t like the vegetables themselves. I love them. But only in savory dishes.

Maybe it’s an American vs. non-American thing. We tried to get our friends in Paris to have some pumpkin pie one year when we were celebrating Thanksgiving with them. They wouldn’t even touch it. For them, it was a double abomination. It was made out of pumpkin, a vegetable, and it included a healthy amount of cinnamon, a spice they associate with savory dishes and can’t understand why Americans put it in every dessert (I’m on the side of Americans on that one; I love cinnamon in desserts).

In any case, this is the time of year when people who are lucky enough to have vegetable gardens start to post pictures of all the zucchini they are getting and asking for recipes to use it up. Inevitably, zucchini bread recipes start appearing left and right. I usually ignore them. But when I saw this recipe for double chocolate zucchini bread, I was curious. I mean double chocolate! I am happy to report that a couple of hour later I had made the first zucchini bread I love.

Now, let’s be honest here. This is a chocolate cake. No, a double chocolate cake. The zucchini is a minor player. Really minor. You won’t even know it’s there. But heck, if you want an excuse to justify eating a slice of moist, rich, luscious chocolate cake, tell people this is a zucchini bread and that it’s actually “good for you.” And then walk away before they ask to try a bite out of your own slice.

Double Chocolate Zucchini Bread – Slightly adapted from The Kitchn

Ingredients:

1/2 vegetable oil
1 cup (7 ounces) granulated sugar
2 large eggs
2/3 cup (1 ounce) cocoa powder
1 teaspoon vanilla extract
1/4 teaspoon salt
2 teaspoons baking powder
2 cups coarsely grated zucchini
1 1/3 cups (6 ounces) all-purpose flour
1/2 cup semisweet chocolate chips

Directions:

Butter and flour an 8×5-inch loaf tin then preheat the oven to 350°F.

In a medium bowl, whisk together the cocoa, salt, baking powder, and flour.

In a large bowl, whisk together the oil, eggs, vanilla, and sugar until combined. Stir in the zucchini until combined.

Add dry ingredients to the wet ingredients and fold until combined (do not overmix). Fold in the chocolate chips.

Transfer the batter to the loaf tin and spread out using a spatula or the back of a spoon. Bake for 60 to 70 minutes until the cake has risen and a toothpick inserted into the center of the loaf comes out without batter on it (the toothpick might just have some melted chocolate on it from the chocolate chips).

Let the cake cool in the pan for 10 minutes before turning out onto a wire rack to finish cooling completely.

Marzipan and Chocolate Ice Cream

When I was a kid, my parents had some strange ideas about how one caught a cold. These ideas weren’t just unique to my parents. Everyone thought them true and from what I can see when I visit my family now, many people still believe them. For example, if you take a shower and wash your hair, you should never walk outside with your hair wet during the winter, because you will catch a cold. You also must always make sure to cover your neck with a scarf when it’s cold, because otherwise you’ll catch a cold. You must never, ever drink refrigerated water in the winter, because you’ll…well, you get the idea. Never mind that winter temperatures only got down to the upper 40s and lower 50s.

Basically, the thought is that there are two things central to getting sick with a cold: cold temperatures (stay away from them) and your throat (keep it warm and covered). This combination created a particularly nasty villain in the fight against colds: ice cream in the winter. Which is why when I was a kid, there was no ice cream anywhere to be found outside the summer months. No ice cream shops, no ice cream trucks, no ice cream in grocery stores.

Come summer, the two main providers of ice cream on the island would open their stores. For many years there were only four flavors: chocolate, vanilla, strawberry, and rose. Then at some point, someone imported a brand of Italian gelato called Pahit Ice and from that point on we had all kinds of flavors and flavor combinations available to us. My and my sister’s favorite was chocolate hazelnut. My mom’s was always stracciatella: vanilla ice cream with chocolate chunks. My dad gravitated towards fruit flavors, like prickly pear or passion fruit.

There was never a marzipan and chocolate flavor, though. Which is strange, given that marzipan features prominently in our cuisine. So, here’s a recipe for a great version of it. It features a chopped up bar of the insanely addictive Ritter Sport dark chocolate with marzipan. If you can’t find it, just substitute with your favorite milk or dark chocolate.

Just remember. Enjoy your ice cream while it’s summer, because once the winter comes, you risk getting sick with a nasty cold if you indulge in it.

Marzipan and Chocolate Ice Cream – Adapted from Love and Olive Oil

Ingredients:

5 egg yolks
7 ounces almond paste, crumbled or cut into large chunks
2/3 cup sugar, divided
2 cups heavy cream
1 cup whole milk
1/4 teaspoon kosher salt
1/2 teaspoon almond extract
1 Ritter Sport Dark Chocolate with Marzipan, coarsely chopped

Directions:

Place a fine mesh sieve over the top of a medium sized bowl. Set aside.

In a separate bowl, with an electric mixer, beat egg yolks, 1/3 cup sugar, and almond paste together until smooth, about 2 minutes.

In a saucepan, combine cream, milk, remaining 1/3 cup sugar, and salt. Cook gently over medium heat, stirring regularly, until sugar is dissolved and mixture just starts to steam (small bubbles will start to form around the edges, but do not let it boil). Remove from heat.

Slowly whisk some of the warm cream mixture into the egg yolk mixture, 1/3 cup at a time, until about half of the cream mixture has been incorporated and mixture is warm to the touch.

Pour the egg mixture back into the saucepan, while whisking, and return to medium heat, stirring constantly, until the mixture thickens slightly and coats the back of a spoon, about 5 to 7 minutes, or until it reaches approximately 165 to 170ºF. Do not let it boil. Pour mixture through sieve into medium sized bowl, discarding any solids. Let mixture cool to room temperature. Cover and refrigerate until completely cool, at least 3 hours or overnight if possible.

Churn ice cream in ice cream maker according to manufacturer’s instructions. Add the chopped chocolate bar just before ice cream finishes being churned. Serve immediately (it will have the consistency of soft serve ice cream) or put ice cream in freezer container and freeze.

 

Ultimate Chocolate Ice Cream

The loss of control (you’re hurtling through the air at 34,000 feet at unimaginable speeds!), the long periods of sitting down, the dry air and pressure differential (hello explosive sinus headache!), the forced proximity to other people (does your elbow have to rest on my ribs? is that Chanel No. “stale smoke and onions” you’re wearing? what part of I-am-wearing-headphones-so-that-I-don’t-have-to-talk–to-you do you not understand?), are only some of the pleasures of flying that I wouldn’t mind never having to experience again.

We flew back yesterday from Hilton Head Island where we visited Steve’s dad, brother, and sister-in-law. Since Hilton Head Island airport is smaller than a Walmart, the only planes that land there are tiny propeller ones. We got into one that supposedly would fly all the way to Washington D.C. It did, but only after it shook and tumbled as it landed enough to make me think about reaching for the barf bag twice. And then, when safely on the ground, I turned airport mode off on my phone to find a voicemail that – surprise! – our flight to New York was cancelled – thank you for flying US Airways – you are now scheduled to fly tomorrow at 9am – good luck.

Fortunately, a helpful agent booked us on a Delta flight which would arrive in New York at the same time as our cancelled flight. Then as soon as we sat down in that plane, two college girls sat behind us. And then one of them – tan, dirty blond hair, short shorts – took a really deep breath and started talking without.a.break for the entire flight. Have you read Kerouac’s “On the Road”? The stream of thought chain of words that never lets up? Like that, except less interesting and delivered in the sentence-as-a-question cadence of valley girl speak that continued on through the flight, through the deplaning, all the way into the terminal until the other girl (who barely managed a few “uh-huh”s and “yeah”s the entire time) ducked into a bathroom, presumably to escape.

Hopefully, your Memorial Day travels are a little less eventful. So, as we begin the summer season, I offer you this recipe for the ultimate chocolate ice cream. It’s got a couple of ingredients that are tougher to find and which you can replace. But if you find them, the result will be worthwhile. Almost worth flying for.

DSC02743Ultimate Chocolate Ice Cream

Note: Gianduja is an Italian chocolate spread that contains about 30% hazelnut paste. It comes in blocks and it’s solid, not liquid. If you can’t find it, use good quality milk chocolate instead. I like Sharfgen Berger Extra Rich Milk Chocolate. Also, if you can’t find malted milk powder you can omit it from the recipe, but try to find it. It makes a big difference.

Ingredients:

2 cups heavy cream
3 tablespoons black cocoa
3 tablespoons Dutch process cocoa
125 gr sugar
Pinch of salt
2/3 cup malted milk powder
170g gianduja, chopped (or use good quality milk chocolate)
1 1/4 cup whole milk
1 teaspoon vanilla extract

Directions:

Place the chopped gianduja (or milk chocolate) in a medium bowl and set aside.

In a medium saucepan, add the cream, cocoa, sugar, salt and malted milk powder. Whisk gently while heating over medium heat until combined. When the mixture comes to a boil, pour over chopped gianduja in bowl. Whisk until gianduja is completely melted and incorporated. Add milk and vanilla and whisk to combine.

Let it cool and chill, covered, in the refrigerator. Freeze in an ice cream maker according to the manufacturer’s instructions.

Chocolate Coconut Pound Cake

“We had dinner last night with our friends and there was another couple with us. The woman, Mrs. P., said that she was your teacher and that she remembers you. Do you remember her?” my mother said to me on the phone the other day.

I definitely remembered Mrs. P. She was my very first chemistry teacher, back when I was in 7th grade. In fact, I remember the first day she showed us a chemistry experiment because it was the day I decided I would be a chemist.

She stood there, behind the large chemistry lab table, a young woman with a pixie cut, explaining to us the difference between an acid and a base and what happens when the two mix. We listened to her patiently but our attention was focused on something else: the test tubes and beakers in front of her. We had heard from older kids in the school about the “cool” experiments you got to do in 7th grade and we couldn’t wait to witness them.

She didn’t disappoint. When she added the pH indicators, we watched in awe as the clear liquids changed colors indicating their nature. But it was the grand finale, when she combined the hydrochloric acid and sodium hydroxide, changing the color once again to indicate their transformation into water and common table salt, that my heart started to race. In that instant, I knew that I loved chemistry and I would dedicate my life to studying it.

It wasn’t until many many years later, after playing with a Christmas gift of a chemistry set, after the introduction to organic chemistry that bored me to tears, and after years spent over a mixing bowl, that I realized that what I experienced in that chemistry lab on that day was not a realization of my love for chemistry. That it wasn’t the chemicals and their nature that excited me. That it was the process of combining things to create new ones that made my heart burst with possibilities. I didn’t know it then, but I had just discovered my love for cooking.

So, here’s my favorite kind of chemistry experiment: a recipe for a tender and rich chocolate pound cake. I’m sure there are laws of chemistry behind the whole process, but who really cares when the end result is so delicious?

Chocolate Coconut Pound Cake – Slightly adapted from Bon Appétit

Ingredients:

¼ cup unsalted butter, room temperature, plus more
1½ cups all-purpose flour
½ cup unsweetened cocoa powder
1 teaspoon kosher salt
¾ teaspoon baking powder
½ cup virgin, unrefined coconut oil, room temperature
1½ cups sugar (plus an optional 1 tablespoon sugar for topping)
3 large eggs
1 teaspoon vanilla extract
⅔ cup buttermilk
¼ cup unsweetened coconut flakes

Directions:

Preheat oven to 325° F. Butter an 8×4” loaf pan and line with parchment paper, leaving a generous overhang on long sides. Whisk flour, cocoa powder, salt, and baking powder in a medium bowl; set aside.

Using an electric mixer on medium-high speed, beat oil, ¼ cup butter, and 1½ cups sugar until pale and fluffy, 5–7 minutes. Add eggs one at a time, beating to blend between additions; beat until mixture is very light and doubled in volume, 5–8 minutes. Add vanilla.

Reduce mixer speed to low and add dry ingredients in 3 additions, alternating with buttermilk in 2 additions, beginning and ending with dry ingredients (do not overmix; it will cause cake to buckle and split). Scrape batter into prepared pan and run a spatula through the center, creating a canal. Sprinkle with coconut. If you want, sprinkle the optional remaining 1 Tbsp. sugar on top.

Bake cake, tenting with foil if coconut browns too much before cake is done (it should be very dark and toasted), until a tester inserted into the center comes out clean, 70–80 minutes. Transfer pan to a wire rack; let cake cool in pan 20 minutes before turning out.

Gluten-free, Dairy-free Chocolate Orange Cake

This is what my cookbooks look like. Whenever I buy a new one I go through it and mark any recipe that looks like something I’d want to try. I like to use these nifty Post-it bookmarks that are clear where they attach to the page so that they don’t cover anything. As you can see from the photo (and this is only a small sample of the cookbooks I have), I end up with a lot of recipes that I want to try out. And this doesn’t include recipes from magazines and blogs, which I collect using the fantastic Paprika recipe manager app.

To make a long story short, I really shouldn’t be adding to my collection of recipes to try. But the other day I was reading a newspaper from back home online, when at the bottom of the page I noticed the title of a recipe: Incredibly Light Chocolate Orange Cake (without Flour).  I was intrigued. Chocolate and orange are one of my favorite flavor combinations (here’s looking at you, irresistible orangettes!). A quick look at the ingredient list revealed ground almonds as the substitute for flour and boiled, whole oranges as the substitute for butter. I was beyond intrigued. I had to try it.

The result was actually very interesting. A moist cake with a distinct chocolate taste but redolent with aromas of orange. I say aromas because the presence of orange in this cake goes beyond what you would get if you used only orange juice. Since it incorporates the entire fruit, you get the sweet and tangy flavor of the orange segments, the mellow bitterness of the pith, and the sharp taste of the orange oil from the rind. All together, it creates a not-too-sweet cake that begs for another bite, if only to decipher the complex combination of tastes hitting your tongue at the same time.

I know this post seems to come a day late, given that yesterday was Valentine’s day. But Steve and I don’t really do much on Valentine’s day, a day we feel ambivalent about. Back in my single days, I used to hold a dinner party for all my single friends, making beef bourguignon and a chocolate torte, all of us toasting to our singledom, in defiance of this silly holiday that taunted us.

Now that I think about it, given the bitter and sweet flavor combinations of this cake, it would perhaps make a perfect Valentine’s day cake, for both those in celebration of the day and those who don’t like it.

Gluten-free, Dairy-free Chocolate Orange Cake – Translated and slightly adapted from Phileleftheros

Ingredients:

2 small oranges, preferably organic/unsprayed (about 12 oz / 345 g)
2 tablespoons orange liqueur, like Grand Marnier
1 ½ teaspoon baking powder
½ teaspoon baking soda
½ cup unsweetened cocoa (2 oz / 55 g)
1 ¼ cups sugar (7 ¾ oz / 250 g)
2 cups ground almonds (7 oz / 200 g)
pinch of salt
6 large eggs

Directions:

Preheat the oven at 350º F (180º C). Lightly grease the bottom and sides of a springform 8″ (20 cm) cake pan. Cover the bottom of the pan with parchment paper.

Wash the oranges and place them in a medium-sized pot. Cover them with cold water and heat over medium-high heat until they come to a boil. Reduce the heat to low, cover, and let simmer for about 1 1/2 to 2 hours. Drain oranges and let cool. (Oranges can be boiled up to two days in advance and kept in the fridge)

Roughly chop the oranges, remove any pits, and place in the bowl of a food processor. Add liqueur and process until no pieces of orange are left. The mixture should be a relatively smooth pulp with small pieces of rind (it doesn’t have to become completely smooth). Add the baking powder, baking soda, cocoa, sugar, almonds, and a pinch of salt. Process until combined.

Add eggs one at a time, processing until each egg is combined. Pour mixture in prepared pan and bake for about 60 minutes, until a cake tester inserted in the middle comes out clean. Immediately run a sharp knife around the edge of the pan and place the pan on a cooling rack. Let cake cool completely in the pan.
